From its austere winter aspect, leafless but displaying long, sharp needles, the acacia tree transforms into a dazzling fountain of white flowers surrounded by green leaves, emanating a heady perfume.
However, the flowers’ beauty is their weakest point; they are prey to the effects of the wind and rain and their flowers fall quickly to the ground.

Smell: rather ordinary in comparison to that of its flower.
Flavor: light, delicate and subtle aromas from the flower.
It is eaten directly from a spoon, in drinks or yoghurts. It remains liquid longer than other honeys.
